Do these come on automatically after a power outage or do they remember their previous state?

They go on at their previous ON state. For example: Set the lamp to 30% brightness, red. Turn the lamp off via the app. Power goes out, comes back on again. Lamp will go on at 30% brightness, red.

How do you change the default color the bulb uses when turning on (mine default to a deep red) with the Philips Hue Bridge?

You could start a scene instead of turning on the bulb with the app. But it is not possible to set the power-on behaviour after using the physical light switch.

If i connect this with philips hue i can use with homekit?

No, unfortunately HomeKit is not compatible. Only Hue products that are connected to the Hue bridge are HomeKit compatible.

I am having difficulty configuring these lights to work with Siri. Is that even possible?

I don’t think these work with Apple HomeKit, so I’d imagine Siri is a no? If they’re part of a scene in something like Philips Hue, then you should be able to use Siri to activate the scene and then the Hue Hub would turn them on. I believe... I personally don’t like voice assistants but I use these bulbs as an expansion to my Philips Hue system and my Hue app works fine with them.
