Excellent knife! Great value!
This is an excellent knife for the money! If you’re looking for a quality kitchen knife that cuts/slices like a laser (when sharpened of course) that you don’t have to baby because it costs more than a car payment then this is the knife for you. San-mai (3-layer) blade construction with VG-10 as the core steel is an excellent solution for everyday use and will deliver the sharpness and edge retention properties of VG-10 with the corrosion resistance of the stainless steel outer layers. It’s easy to sharpen and will not rust if you wipe it off after use. Fun fact - this version F-807 is the exact same knife as the FU-807 but costs about $10 less (depending on Amazon availability and pricing). The F- series of knives are the Fujitora brand sold in the domestic Japanese market, and the FU- series are the same knives re-branded as Tojiro for sale outside the Japanese market like the US. In fact anytime you you see a F-8## vs FU-8##, they’re the exact same knife.

Great first Japanese chef knife
This is my first Japanese chef knife, and I have to say I'm very impressed for such a low cost knife. It's razor sharp out of the box and feels good in the hand. Definitely recommend for anyone who's just getting into Japanese cooking knives like me

Perfect for Left Handed Chefs!
I bought this for my son who is left handed and has been having a hard time always using most chef's knives that are made for those that are right handed. So many left handed knives are so expensive - $200+. This claimed to be cut at angles that work for both right and left and was a great price! Took a chance and it's perfect for him! He loves it!

A beautiful specimen
After 6 months of use this item is like the day I bought it. Maybe that is because I don't actually use it. It's too beautiful. I just like to admire it from a distance. I sleep with it under my pillow and don't let anyone in my family touch it. No seriously folks. It's a really nice knife and is still sharp as a razor.

Cuts like butter
Very smooth blade. I've only used it for about a month now and the edge has stayed sharp. Good balance to the knife. I wash by hand and hand dry. I don't put it with other knives, it stays in its own slot.

Quality Steel
Used the 10 and 12 inch versions professionally for over a decade. Back before there was any English lettering on the knife, haha! Quality knives. A little heavy, but that's a good thing imo.
