Texture like blue cheese in a briney soup and packed with nutrients and good bacteria
This is the most famous Chinese fermented tofu brand. I grew up eating this and it's known to be packed with nutrients (can be considered a superfood). Tofu is already healthy but add fermentation to it and it's perfectly made for the gut biome. I find that it tastes best with congee (rice porridge) but instant oatmeal works too. Note that the rice porridge or oatmeal must be bland and CANNOT have any flavors. It's because the bean curd is very salty and intense. To eat this, you get a spoonful of rice porridge and place a tiny piece of fermented bean curd on top of it. Eat it like this and you'll experience the true flavor of the bean curd (salty, slightly alcoholic, and unlike anything you've ever tasted)! The texture is like blue cheese and the tofu chunks are floating in a briney marinade that can also be used as sauce on your rice porridge/oatmeal. The flavor is something else..it's much stronger than Japanese natto, very salty, with a hint of alcohol. It might be an acquired taste like blue cheese but once acquired it's delicious. Give it a try!
