What are the cadmium levels?

I don't believe it is possible to find any cocoa powder that doesn't contain some cadmium, as it is a naturally occuring component of all soils. However, most all the research I read said Valrhona is one of the powders with the least amount.

Is this worth the premium?

The difference between this and Hershey's cocoa powder is night and day. Valrhona has an intense, full bodied flavor. Just from the aroma alone you can tell it is good.

I read the label and see nothing about it being Fair Trade.

I believe so, bit not 100% sure.
