The Sausage Maker Inc. Fresh Collagen Casings, 26mm. The ideal size for making hot dogs, wieners, and frankfurters. Edible; tender and delicate, yet durable enough to withstand your pan's sizzle. Can be used as a replacement for natural casings (though they will not have the same characteristics) and should be cooked shortly after stuffing. Translucent. Comes with 4 half strands per package. Stuffing capacity per package approximately 28 lbs. (98 feet). Contains collagen casings that are edible. Fresh collagen casings are a natural product made from a refined layer of cattle hide. Because of this, collagen casings are much more uniform in size, when compared to traditional natural casings. Easy to use, and do not require soaking; simply unravel and load onto stuffing horn. When twisting into links, make first twist in one direction and then next twist in opposite direction to prevent unraveling, being careful to not overtwist links (maximum two full twists). Keep sealed and under refrigeration when not in use. If casings become brittle, soak briefly prior to use. Review: Was happy to find this product. Review: Fried, or grilled: I found the texture and taste good, boiled: the casing sort of dissolves and turns mushy. I found the casings to be quite strong and durable. I used these for fresh sausages so I did not smoke them, but I hanged ropes of sausage to dry and the casing did not break. I found like others that it is hard to twist links without them unraveling eventually, so I ended up twisting links and then tying them with butcher string.

Only suitable for fresh linked sausage. I'd read online you could still use them for smoking, as long as you weren't hanging them. They simply aren't strong enough for even laying flat in the smoker. Also, don't plan on using them for ring sausage, they'll break unless you drastically understuff them.

Easy to use, didn’t break, and they held together sausages well.

The batch I received works great for me. Made some chicken sausage there was a burst, but it wasn't huge and I'm not going to complain about it. Has good flavor and easy to use. One of the ends is already tied so all you have to do is pull it apart and place it on your grinder.
