How much weight does this support?

I would say pretty much any weight, if you are talking about putting something heavy on top of it, or sticking it to the bottom of something heavy. I use it on the bottom of small items to keep them from moving, but not permanently. And for that purpose, a tip: a little bit of moisture on the surface of the material before you place it will make it really "stick" until you want to move it.

If I put a hot pan that came right off the fire from a gas stove onto this product, would this product melt? Or would this withstand the heat?

This is not the material for that application. Your question indicates a pre-meditated effort. Find something more suitable. This is very thin and, since you have not indicated the substrate, the heat you indicate may damage it, even though it wouldn't hurt the silicone sheet.

can it be used in a cars engine (under radiator hose) ?

Very unlikely. It's not intended as a sealant and I doubt the adhesive would stand up to that kind of heat. My only use for this material is as a non-slip base for different items that I need to stay put but don't what to permanently attach them to a surface.

Will the adhesive stick to metal? I'm trying to stick this to a metal roof rack to prevent scratching the paint of the car.

Yes. This item will work well in that capacity. One consideration for you before you do this is to consider the smoothness of the base of the roof rack. The silicone is durable but sharp edges could still wear through to the paint, through road vibration. Best wishes.
