Q: Can it be used for batting in blankets

It tears pretty easily but if you have a front and back with it in the middle it should do fine. I used it on dining room chairs to replace old batting and it worked perfectly. Good Luck.

Q: If I need 2 yards, do I select 2 as the quantity?

I would think yes When I covered my chairs, I needed some extra to pull around the chair’s padding I liked the quality of this much better than another company’s

There's no difference. It was not compressed as much by the machine.
