Someone above wrote the temp goes from 325-450, is that true you cannot bring it down to 205 for slow smoking?

OK - I've owned this thing for 6 years. Here's a definitive and simple answer. This thing cooks hot baby. It can smoke fantastically at lower temps, but you gotta man it - which is fine and totally enjoyable. I've done turkeys with separate turkey breasts at the same time and they always came out pink and smoky as all git out. I've done 5-7lb shoulders for pulled pork, again fantastic. Three steps: 1) Brine 2) Refill the box and relight new chips about every 45 mins to 1hr. To start the wood chips, you have to crank it to high, then turn it all the way down when the smoke starts to shoot out of the orifices inside. 3) Keep the lid propped up with a paving brick or rock so you have about 2-3" of mouth open at all times. When you don't notice wisps of smoke whipping out, its time to refill the box. Get some beer, a radio, and get to sittin. Feel free to fool with it once in awhile. I don't turn it much. For the pork shoulder, at the end make sure you foil it and get the meat temp up to 190ish for a good hour so it will fall apart. You can even get that crusty exterior that escapes the locker smokers, and I think it smokes poultry better than a lot of bbq spots. Temp wise you can get it to stay around 210-230 but it fluctuates and the infrared is doing some cooking too, so don't worry too much about that. The meat temp is more important. Even at lower temps, it will smoke quite a bit faster than expected. But if you follow those steps, you'll still have tons of smoky flavor. Oh, and wear a jacket that you don't expect to go meeting the Queen in, because that sucker will smell like apple chip smoke for a week.

what size propane tank do you use?

Hi, I don't know the size of the propane tank but it is the standard size that you get from Blue Rhino, you give an empty and get a full one for approx. $20.00. Also, do yourself a favor and never use a bristle grill brush. I took a bristle out of my mouth while eating a hamburger, then I closely inspected the grill and saw many trapped on the lower grate supports. Charbroil makes a red nylon one they recommend. Google grill brush bristle injuries, you won't believe it. I had no idea. I am trying to tell everyone I can.

How does this compare to charcoal grills? We love steak, chicken and chops... will we be disappointed?

This will be a great grill for you,.. I suggest you review the manual on how it sets up. If you are cooking for more than 4 I suggest buying another insert for the grill rack, again, do some online research. The meat will remain moist! I bought mine to use as a smoker but not as impressed with that function as I cannot get the temp to stay down to 210-225.
