Not quite one tablespoon- they’re a little bigger than a sugar packet. That said, a little goes a long way - worked well for me using just 1/5 packet for 1qt sauerkraut. Hope that helps!

Q: can you save the unused opened pack and for how long?

Yes, keep in fridge until the next batch. Stays cold should keep for a long time.

Q: what exact culture strains are in this?

I read on the answers section for the page for the bigger box of them that they use the strains: Lb. plantarum, Ln. mesenteroides, Pc. acidilactici. These are indeed the same strains that were in the slightly pricier brand I was buying at the market. I've not used this brand, but I'm going to give it a shot and hope it's as effective seeing as how they say it contains the same stuff.

Fermented ketchup is the BEST! You will need only a small pinch of this between your fingers.
