Can anyone tell me how thick these bits are?

The Dremel 560 Drywall Cutting bit is 1/8" in diameter, on a 1/8" shank.

I'm planning to install PVC ceiling beadboard on my porches. I have 5 recessed can light cut out. Think this bit will do the job?

The traditional method of accomplishing this type of cut is with a hole saw or jigsaw. Dremel cutting bits may not give you a clean cut, load the bit with debris and would not be your greatest opportunity for success.

Can you use this with a RotoZip?

Yes it will work fine with one.

Will this bit fit on the Dremal 3000? I already bought one that didn't fit.

I didn't use it with a Dremel 3000, but I think it will. Rotary tools, unlike drills that come with a chuck mechanism, use adapters instead. Adapters come in different sizes and fit inside the rotary head, and hold the drill bit in place. Again, I didn't use it with a 3000, but I bet that it should fit.
