If it gives of a "heat-signature" it will show you a close approximation of what the temperature is. I use mine to find out the surface temps on my griddle when I adjust the gas knobs.

Is it good for checking wall temperatures to check insulation needs and results of insulating?

I haven't used it for that particular reason but I think it would work. My main reason for purchasing was because I own a Blackstone Griddle and wanted to know the different temps on the grill top. I have however used it to measure the heat on the outside of my brick house. In the summer the sun shines directly on the front brick and it gets very hot to the touch. I have directed it at my inside walls also and it gives a temp. I have been very happy with my purchase and I think you would be also.

Can you turn off the annoying beep?

Sorry, this cannot close the beep sound，，This measurement accuracy is good, has been used for 2 years of records, and is still normal use

Can you use this to check the temperature for candy making?

This is really more of a surface thermometer. For candy making, if the temperature is homogenous it could work. I've found that that temperatures can vary significantly from the surface to the bottom, so I prefer to use a thermometer inserted into the product.
