Do you have to use the blue lick clip? And what is the difference between the white and pink straight one?

The blue ring is to prevent the plunger sleeve from being accidentally pushed in which could disconnect the tubing.
I recommend you always use it on every fitting.

The white straight connector is to connect 2 tubes together. You can use it in either direction. No difference.
The pink one has an arrow molded on it (you will see it if you magnify and look close enough at the picture).
It has a check valve and will allow water flow in one direction only - In the direction of the arrow.
This prevents water from flowing back (commonly referred to as backflow).

The pink ones only are check valves. The other straight ones are straight thru connectors.

What is the psi rating on these?  planning to use for a misting system in the garden

Good question Robert.
These fittings are rated for use with a water filtration system which is under pressure and could reach 100 psi.
If you are planning on using them for a misting system, it would be considered an open flow system with very low pressure.
I think that you can rest assured that these fitting are plenty strong for your need.
I am an engineer and would certainly not hesitate for one second about using them and still getting a worry free good night sleep.
You are safe.
If you really want to know the pressure ratings on them, you will have to ask the manufacturer.

From my research similar fittings are 150psi at 70 degrees F. and 60 psi at 140 degrees F.
