how do you get the cheese out of the mold while preserving its shape?

Thanks for your question. Once the curds have drained the cheese forms quite a solid mass that holds together nicely. You just turn the mold upside down over a plate - tap the base lightly and stretch the sides out with your fingers if you need to. The drained cheese comes away from the basket. Will these molds work to make Brie cheese?

I don't think these are good for brie. If I remember correctly, brie requires frequent flipping; the molds in this set are not cylindrical, and the sides are not smooth which would make flipping a problem. That said, these are best for fresh cheese like queso fresco, ricotta, halloumi...

Do you need to put a weight on top after putting the curds in these molds?

Yes you can add a follower to these to weigh down the curds. It depends on the cheese you're making. For a small Ricotta mold you just let gravity do the job for you. If you're making Feta cheese in the large square cheese mold then you might have wrapped the curds in cotton cheesecloth and you can put a small plate on top and sit a weight on it to press the curds. Most of the cheeses you make with these molds will just be gravity pressed though - just simple fresh queso or quark type cheeses.

how am i to "press" the curds into the mold without a top press plate or something like that to go on top? is there at least 1 top cap that fits all?

Thank you for your question. Each cheese draining mold in the set is a different size. They are designed for rapid draining of soft cheeses and need very little weight applied to them to form a cheese. If you do want to add weight for extra firm feta or paneer, use a small clean plate or jar lid as a follower and sit your weights on this. I hope that helps. Heather Country Trading Co.

These are great! They are functional and the size is perfect for a home cheese maker unlike some other products that are just way too big for a small at home recipe!

Great Cheese molds

I use these molds weekly when I make paneer. I mostly use the two square ones. One to hold the cheese and the other to put on top as I weigh it down with a jar of water to squeeze out excess whey. They are easy to clean, if you are using cheese cloth and work very well.

Update: Seller resent the entire kit. 5 thumbs up Using cheese molds for years. Bought this kit because of the two smaller molds, and used the larger round one for the first time a few days ago for soft ricotta. Bottom broke immediately when i was trying to release the cheese out.

fait le job

petit pack sympathique. je viens de faire mes 2 premiers fromages grace à ce pack. reste à savoir combien de temps ils tiendront sur la longueur. je n'ai pas l'impression d'une qualité exceptionnelle... je rappelle qu'ils faut taper les moules pour inverser le sens des fromages! pour le reste, c'est conforme à la description.
