It gets hot quick & keeps boiling on low. **Q: could this pot cook rice?** A: that's a big no! Rice needs to absorb all the h20, including steam...this pot vents steam by design. The rice will not cook fully. **Q: Do you have to unplug this hot pot to shut it off, I did not see off on the knob?** A: Yes you have to unplug it because it stays in warm if you don't. I would not recommend it for that purpose, as the 'non-stick surface' is not very non-stick. Every single time I've made soup I've had to scrape and soak to try and get the gunk off. However, while I was waiting for this to arrive, I noticed a hole had rusted through my metal water kettle. So, I've also been using it to heat up water for coffee and tea. It is so fast and does a great job. I also imagine it would be great for cooking ramen or pasta, but I haven't tried it for that yet. A downside of it though, if it's plugged in, it's on. The selector goes from Warm to Boil - there is no Off. So, I probably wouldn't recommend buying this if your a forgetful type person that might leave it plugged in. It works for me though because it boils water so fast, I just stand there and wait, and immediately unplug it when I pour the water, so I've kind of gotten in the habit of it.
