What adapter do you use with this one?

I imagine you're looking for a screw on surface mount adapter? The best way to mount these is in a 10mm hole, however Blum makes a screw mount surface mount adapter. I don't think it's sold separately but you can always call Blum. https://www.amazon.com/Touch-Latch-Self-Closing-Hinges-Screw-Mount/dp/B07PP9SHMW

Do these actually latch in the retracted (door closed) position? i guess i don't know what the "tip on " function does?

They come with a magnet tip and operate like a traditional push to release, there is a small metal plate you mount to the door to contact the tip. So more specifically to your question, yes, they latch in the closed position.

will this work with the old adaptor 955.120-02 ? Thank you!

I don't believe so - we can't interchange our old stock items with new ones.
