As someone who makes sourdough regularly I feel parchments sheets are a must! Only think I would change is the width. If your using a 6-8 quart dutch oven when baking the sheets are not very wide so when grabbing them out to lift the bread it can be hard to find and end and it can caused me to burn myself. Otherwise its a great product
