What is the composition of the fabric?

This was bought as a gift for my sister, and although I checked what the fabric felt like, I didn't look at what type of yarn was used. I would compare the feel to a soft cotton. It's more substantial than the weight might suggest.

Does this pashmina crease?

I bought tgexwhite one. Yes it does crease.

I am 5’5”, would this shawl cover my shoulders and knees (for visiting churches in Europe)?

The shawl is as it is in the picture. It would cover your shoulders and the tassels would reach your knees but not give them coverage..I m 5ft 4ins and I tried it specially.
