Are these water resistant?

Against rain, they do ok. Standing water, not so much. Extremely comfortable. Wears very well, but the fabric sides and top are not waterproof.

Are these true to size?

Yes, I find these to be true to size.

Does the New Stellar G2 have a composite toe like its predecessor? I have ordered the original Stellar 5 times and loved them.

Did not see any indication that these have toe protection.....very good boots and great fit but not sure these will work if you need safety rated boots.
