Hi There , our Makers can take up to 3.5KG of wet meat if packed correctly. Bearing in mind this will reduce in weight once dried. so 1.5KG to 2Kg when dried, depending on how you like your Biltong Regards Brad

What temperature range does the fridge have? Could you cure salami etc as well?

The box was a gift for my son in Portugal. I can only say that he was happy with it and that it took only 3 days to cure the meat. I am sure that you will be able to cure salami. Hope this helps. Regards Marie
