Hello. These 12MP cameras can only be turned off by cutting their power. So you only need to turn off the NVR directly.

Can I run all the cameras to a Poe switch and connect one Ethernet cable between the ditch and the nvr?

Hello. If the POE switch is directly connected to the NVR, then the number of cameras connected to the POE switch should not exceed three, since the port of the NVR has a power limit.
