Is this suitable to add to fermenting sour pickles?

Well on the packet label does say suitable for all food preparations so I'd say yes. I added to mortar mix to speed up drying time. If its good enough for cheese making, should be good for pickles but check your recipe I'd say.

can this product be reused once it has absorbed moisture

No..it is designed to absorb water and therefore you just tip the liquid away and replace the calcium chloride. I use it to refil my dehumidifiers.. the disposable ones. So that I can reuse many times.
