I got this as an upgrade to my 5 inch cleaver (it's 7 inch) primarily to thinly slice home made charcuterie. It is AMAZING for this but it is rapidly becoming my go to kitchen knife. It has a stainless steel blade where some are high carbon, but I think stainless is better and easier to care for, for kitchen work, in my opinion and I make knives using high carbon steels. Great price too. I'm really interested to learn how to use a clever of this size as I've seen in many Asian cooking programs. Can be sharpened on a wet stone if you need a better edge. Not as light and nimble as a Chinese Kitchen Knife but nowhere near as heavy as a Butchers Cleaver.
