Please forgive if I am not understanding your question correctly, but pretty much all drum heads (including Remo) have metal collars and yes, the drum head is shaped to where there is a "shoulder" that rests on the shell of your drum. So your hoop applies the pressure to the metal collar and your shell pushes up from underneath on the premade shoulder. As long as you get the dimension right, example: 14 inch head for 14 inch Tom, you are good.

If you want to use a drum head for autographs, a coated head would be a much better choice.

how do you measure to get the right size?

Remove the drum head from the drum then use a tape measure to measure from 1 lug across to the opposite lug. Most drums are even numbered sizes except for the occasional odd size 13" or 15".
