What kind of sweetener do they use in the syrups?

They use BOTH Sugar and Sucralose. ~16g of Sugar and less than that for Sucralose (They don't specify but it's farther down on the ingredient listing). For comparisons sake MTN. DEW/Cherry Coke has ~42g of sugar on top of the High Fructose Corn Syrup. I was initially worried about the sucralose as well but these actually taste pretty good (but not exactly like Coke or Pepsi) and I say that as someone who refuses to drink Diet Soda of any variety. I haven't bought a 12-pack of soda since I got my sodastream.

Why can't we see the label? How much sugar is in this stuff?

It's on the Soda Stream website. The cola for example has 11 grams of sugar.

Does the Cola taste like Coke?

It depends on how much syrup you put into your container. I have to do it per taste, not by the measured amounts suggested
