A few degrees of I accuracy won't ruin a sharpening job and you and your knife will never see a difference between 2 or 3 degrees, but don't start with a phone app and finish with a protractor. I like my knives razor sharp so I set the angle to 17 degrees, but if it comes out 15 or 19 it would hardly be noticeable, but I do t want 15 on one side of the blade and 19 on the other .... also, the sharper you get it the shorter it'll last so if you like super razor sharp, it can be done but be ready to re hone often. **Q: Which grit stones should you use for common kitchen knives? I don’t think it is intended to need to use every grit every time you sharpen a knife...** A: If the knife is sharp, then 800 or 1000 should be fine for touch ups. For a really dull knife, start out with a course or medium grit and work up to fine or ultra fine.
