Do the walls come of or is it just the roof?

Each floor can disconnect from each other. The roof can be removed, and rather easily. This set is awesome.

what does frustration free packaging mean? Not in the original box?

Based on aother person's review, I think the phrase "frustration free packaging" means, NO shipping box to protect the Lego box. I can attest to that as being a true statement. I received the Blacksmith set with the shipping labels attached to the LEGO BOX...therefore the box was ruined. If having the box in good condition is important to you, not having the Lego product protected by a shipper would be a consideration. Hope this helps.

Can you start to build it on a lego baseplate?

Short Answer -- YES !! It is 32X32 , or you can make it more sturdy by building a MILS plate ( modular integrated landscaping ) . Besides building as instructed does not provide a stable enough base to move and display . So at the very least use a 32 X 32 base plate and MILS if you have extra parts or just buy a ' dollar store ' base plate and a Lego classic brick set !!
