Is it showing charge percentage on the macos?

Thanks for your interest in Satechi, and thank you for your question!

Our mouse does not support the battery percentage feature on macOS similar to the Apple Magic Mouse or Trackpad. Our mouse actually notifies you it is low on battery with the LED light found within the scroll wheel.
Even if the mouse is fully charged, macOS will not reflect that because our mouse does not support this feature. (in most cases it will display around 60% even if the mouse is fully charged since our Mice does not support this just yet) 
Also, the M1 Mouse will only charge with a USB-C to USB-A cable (like the one included) and can be charged with a USB power adapter, such as the one that comes with your cell phone. We have found that charging the mouse from a computer's USB-A port provides less power than using a USB wall adapter directly. Unfortunately, it will not charge using a USB-C to USB-C cable.

Does it compatible with Ipad 2021?

We can kindly confirm that this mouse should indeed be compatible with the new iPad 2021.

Our mouse requires Bluetooth 3.0 or higher in order to work properly, and the new iPad supports bluetooth 4.2 which should be compatible with the mouse.

How do you switch from one device to another? Every time I connect to a new device the old one doesn’t connect unless I remove and readd the mouse

I have similar issue. but I can add search again on the existing paired device and also after removal of paired device
