The grain is clean and beautiful and I feel confident there is no debris to damage my stone mill. The flour is sweet and fragrant. It works great in bread baking and seems to have plenty of nice strong gluten. The loaf pictured is 100% fresh ground with 85% water and is sourdough leavened. The breads have great flavor and a beautiful pale honey color. The white bran lacks the brown color and also the slight bitterness of red wheat. The white flour lovers in my family gobble up whole wheat bread made with this flour seemingly unaware that it is whole wheat. The bag is big and pantry moths and moisture are a reality where I live, so I poured the berries into seven 2-quart ball canning jars for storage.
