Can you use regular cookware on the burners or does it have to be the Jetboil brand?

You can use regular cookware. The main difference is other cookware won't have the flux ring which helps heat faster than without it. It works just like a gas burner so you can use whatever cookware want.

Does this stove have to be protected from the rain?

Depending on what you are cooking, maybe yes, maybe no. If I’m boiling water, I have been out in moderate rain and had no problems. If I’m frying i’ll cover the stove. As long as the burner is covered with a pot the burner works well. I do use a wind shield 99% of the time
