WE USE THIS FLOUR TO MAKE PRESSED DUCK AS A COATING TO THE OUTSIDE AND THEN DEEP FRIED. THIS IS SERVED WITH A PLUM SAUCE. IT IS ALSO EXCELLENT AS A DREDGE FOR FISH AND AN EGG IS NOT NECESSARY TO MAKE THE FLOUR STICK. THERE IS NOTHING LIKE IT. THERE ARE MANY USES FOR IT BUT THIS IS WHAT IS IMPORTANT TO US.
