Will it work on crochet/knit hats?

Personally i wouldn't . i would use sew-in snaps for crochet/knit.

What size are the snaps?

They are what I would call Average size. The same size you would find on Children's clothing. I used them on my toddler granddaughters clothes.

Do these work on thicker clothing? or just the very thin fabrics?

I used them on cotton fabrics for snap front shirts. I don't think the prongs would be long enough for thicker fabrics.

Where can you find just the snaps?

In this kit, just a have snaps and install tools.
