how tall can this hawiian coconut palm tree will be?

Not sure as to this one, could be 30 -60 feet tall if planted outdoors. Some coconuts will only get 10 - 15 feet tall, but not sure about this one. If you leave it in a pot, it won't get that tall as the roots will restrain it. If you aren't going to plant outside, they struggle through the winter. I got mine in November and it's been indoors and is barely making it. Good luck.

can you grow if placed directly in water?

Some coconuts start in water, but growing until maturity.....unless the level of water is very low and it is mixed with soil.

What typ of coconut tree

It is a standard coconut tree, not dwarf. Ours is now 3 years old. It lives on our deck in summer months & bring it in the sun room over winter. The trunk is 3 ft tall, approximately 6 ft total. We live in zone 8, but it remains potted & portable for the move back inside in the fall when frost threatens.
