Now that I need gluten free, it's even more important to have good flour for making bread, etc. The texture is fine, it mixes well, is easy to measure and use, and makes a good flour substitute for wheat flour. Bob's Red Mill provides another quality product! Rice flour can be ground too fine, making it hard to work into some uses, but this flour is absolutely a perfect balance.
