Great entry level "real" knife...
Got the 6" Sora I make most of my food at home and have worked in a restaurant kitchen briefly so I know what a difference a good, sharp knife can make. Finally bit the bullet and got a "real" knife, knowing they're around $100. I was concerned about the plastic handle at first, but apparently a lot of the higher end knives have synthetic handles because they're more antimicrobial (and there for sanitary) and generally easier to care for. I noticed after I got this I could have gotten the Kanso utility for about $10 with a wood handle, so consider that. Obviously it sucks that some people have had the tip break off their knife, but part of that is because the blade of this knife is made out of very hard steel- hard steel makes for a great cutting edge but is less flexible and more brittle. The non-cutting edge is wrapped in a softer steel, which is cheaper and softer, but more durable. Glass is a very "hard" material which is why it's so sharp but so brittle. I keep getting watermelons and it's so easy to just cut the entire rind of, cuts through brussels sprouts like nothing too. I'm not really sure how Shun's "free sharpening" policy works, but if that's a thing I can do this might be my brand- I've heard shun mentioned a few times but when I was doing research Babbish (aka Andrew Rea) suggested it for an affordable entry level knife, so I was sold. I have small hands and I'm working in a small space, so the 6" one is plenty big enough for me.

All the years I have been cooking for my 5 sons and I never had a decent knife at home. This knife is great value. Cuts like a champ. Sharp, easy to use, easy to clean. What a difference a good knife makes!

Nice
Solid knife for anyone in the kitchen. I've seen others complain about the handle, but I haven't had any problems with it. Light, comfortable and holds an edge great. As long as some idiot doesn't knock it off the table and bend the tip... it's perfect.

An amazing knife - a lot of care required, but well worth it!
Also recommend purchasing a Messermeister 8" knife sheath. I DO NOT recommend using a knife magnet with any high end knife! Purchased this with an Amazon gift card wedding present. We are actually vegan, so no notes about cutting meats... but we use this for a LOT of vegetables, some can be very challenging to cut. Works great for tough items like kale, onions, and harder veggies like carrots. The blade stays sharp with minimal honing. Purchase a Shun honing steel for this. Recommend a Shun knife care kit at some point or taking this to a professional for sharpening regularly. Most folks suggest professional sharpening a year or two with regular use. If you are honing regularly, you won't need to sharpen as often. Otherwise you can use the Shun kit if you are comfortable sharpening knives yourself. DO NOT use and electric sharpner! Always make sure to clean and wipe dry every time! If you don't dry the knife completely, it WILL chip. My friend learned this the hard way with his Shun knives. Highly recommended!

Nice knife except for the handle
I have always wanted a Shun knife. I've had a Wurstoff 6 inch for quite a few years now. While 6 inch gives good maneuverability for my small frame, sometimes you do want your knife to be just a bit longer to help cut through bigger pieces. I guess Sora is the budget tier of Shun knives. The handle is made out of plastic. However, it still feels good to the hand. Knife is very sharp so cutting is a breeze. They recommend straightening the edge with a steel rod every so often. Shun also offers free sharpening for life so you can mail it to them and they will sharpen for you. I am glad I got on this deal.

Very sharp edge
Cuts beautifully and has held its edge, needing honing once in awhile but no sharpening. It is only used for cutting meats and vegetables that require precision, as I have other knives for utility work, though it does well in those tasks if neccessary. I wouldn't use it with bones of course as the blade is razer thin and has the potential to chip easily, and that isn't what this blade is meant for.

Simply Amazing Kitchen Knife
This is an amazing knife. This is my first quality kitchen knife I've purchased, and it just blows the doors off everything else I've used. I have been using it regularly, and when it cuts, it is like cutting through air. There is no resistance whatsoever. I was cutting beef slices for gyudon, and I was able to cut them paper thin without even having to partially freeze it first. One thing I notice other reviewers saying they don't like is the plastic handle. I personally don't mind it, it is comfortable and grips well. The blade is gorgeous and extremely light. I've been using it every day since I bought it on a maple cutting block, and it is as sharp as the day I bought it. The only thing that I might consider a negative is the composite blade. Eventually, you'll sharpen the cutting edge off and the knife will be useless, but it will most likely take years, and that is why it is less than half the price of the classic series, so it's a trade off. Overall, easily the best knife I've ever used, and I recommend it for home chefs.

Muy bueno. PERO NO SE LO PRESTEN A ALGUIEN QUE NO SABE DE CUCHILLOS. . . este cuchillo es solo para cortar VERDURAS, CARNE , FRUTAS. ~NO HUESOS~ Yo se lo dije a la persona que lo agarro cuando yo no estaba , lo que pasó después es trajico. :,(,,,,,,, . : Un día yo no estaba en casa , Alguien estaba cortando huesos y miró mi cuchillo que acababa de comprar , acto seguido agarro y lo empezó a usar de Machete para cortar los huesos wtf . lo que pasó ya te lo puedes imaginar si sabes de cuchillería se desquebrajo toda la parte de acero VG10(ya no sirve) . este cuchillo tiene una dureza muy alta por lo que no es nada flexible y eso es bueno para lo que fue hecho este cuchillo. pero porfavor dejen de usar las cosas para trabajos para los cuales no fueron DISEÑADOS , si alguien sabe sobre cuchillería porfavor agale casi. . . Pros: -muy bonito -se mira muy bien el San Mai -corta muy bien -facil de afilar -ofrese mucho , cobra poco -(calidad-precio) -exelente calidad de construcción -es cómodo . Contras: . no ningun contra. pd: a las personas que se les rompe es por qué no lo saben usar , yo lo use por el suficiente tiempo como para poder dar una reseña sincera. (•‿•)
