For fifteen years, food writer Belinda Ellis traveled around the country for the White Lily® flour company, teaching people to make biscuits and listening to their stories. “I learned that deep in the soul of a biscuit, there’s more than the flour, fat, and milk. A hot biscuit embodies a memory of place and family,” she writes. Ellis’s heartfelt tribute to the biscuit celebrates the many possible flavors and uses for this classic southern bread. The first recipe in the book is a master recipe with step-by-step photographs showing how to make the perfect biscuit. In an evocative and enlightening introduction, Ellis delights readers with biscuit history and its intimate connections with southern culture and foodways. The book’s 55 recipes range from traditional to inventive offering a biscuit for every occasion: Flaky Butter Biscuits; John Egerton’s Beaten Biscuits; Pancetta, Rosemary, and Olive Oil Biscuits; and The Southern Reuben. Review: Little Southern Cookbook - This small cookbook has many wonderful and yummy recipes in it! The Biscuit Cookbook is in a series and I have purchase everyone of them for myself and as gifts! I would Highly Recommend them to those who Love to cook and to others that Love to look/collect cookbooks! Review: Worth It! - This book is worth it for the first basic biscuit recipe alone, where I learned everything I'd been doing wrong when attempting homemade biscuits. The first batch using the recipe came out perfectly! As a Southerner living up North who occasionally craves a biscuit like the ones you find everywhere back home, I'm delighted to finally be able to make them right. I'll be working my way though this one - every recipe is intriguing!

The pimento cheese, Bentons bacon and fresh hot biscuit recipe is wonderful! Great directions for a tender southern biscuit, gravy and more. The cookbook is very well written with sweet memories of the authors childhood sprinkled in!

Too much redundancy
Some of the ideas are interesting, especially a couple of meat and potato biscuit recipes. There was, however, an extremely annoying amount of redundancy in the directions. How many times does one need to be told to “cuddle” the dough, or when the texture tells you there is enough buttermilk. She could have given a single set of directions, and then talked about variations. I haven’t tried any of the recipes yet, so I don’t know if they actually work. I thought she did a good job of explaining about soft wheat flours.

Interesting book a little pricey for such a small recipe/history ...
Interesting book a little pricey for such a small recipe/history of food type of book. But I think this series is very interesting. I will have to order more of them...preferably when they are on sale.
