A product cannot be called chocolate unless its made with cocoa butter per FDA regulations. It also tastes like hot garbage ### ⭐⭐⭐⭐⭐ This made perfect peanut butter cups. *by K***R on May 8, 2018* I make candy constantly during the year. I have my suppliers for large bulk orders but when I need a quick order I will order here or I will head to the craft store for the small bags of wafers. In this case, I needed a quick couple of pounds and ordered Merckens. I've never used their wafers before, so this was completely new. I melt my wafers in an electric melting pot, I do NOT use a microwave because if heated too quickly or too hot, the chocolate will immediately get lumpy and the flavor will change. I've been doing this for nearly 20 years now, so trust me, if you're getting weird flavors from these wafers, try changing your heating methods a bit.It arrived, and this is only the beginning of May, partly melted. Thank you Fedex. I stuck it in the fridge for an hour, took it out, cut it up into small hunks and it melted fine and there was no appreciable change in flavor. In this case, with this particular bag, I made chocolate/peanut butter cups. I always use a brush to make sure the chocolate is evenly spread on the sides of the cups. This chocolate stayed in a good consistency throughout this process and the cups are being eaten as I write.I've found that most people who try to use chocolate wafers don't watch the temperature of the chocolate when it is melting, thus causing the chocolate to change in both consistency and flavor. In this case, my melting pot and I loved this order of chocolate and I will not hesitate to order it again. ### ⭐⭐⭐⭐⭐ Highly superior *by C***Y on September 24, 2014* I ordered Merckens Milk Chocolate and Dark Chocolate Wafers for candy making from Larks Cake and Candy. Ordering was easy and pricing was the best I found on the web. I received the chocolate in a timely manner and apart from being melted, it was in good condition. The melting in transit does not affect the final product, as the company was quick to assure me when I emailed them. It just made it a little more difficult to use since instead of pouring out wafers, I had to hack off chunks.The chocolate was terrific. It was creamy and melted like a dream. The flavor of both kinds was rich and delicious. I used it to make "bark" on a tree stump shaped cake. Then, I painted more chocolate over the "bark" to set it. The cake was fabulous! I also used it to make chocolate leaves and they worked beautifully.
