I have successfully risen 120~oz of dough in the tray by using the 2nd tray as a lid so the dough had space to rise. This combination is about 7 inches tall. I proof my pizza dough balls in these. They are easy to clean and have plenty of room. Only one lid but if you are using both trays, the top one acts as a lid for the bottom one. The lid is not air tight but if you weight it down with a few pounds on top of it the dough does not dry out, either inside or outside the refrigerator. I have kept dough in the fridge for up to 72 hours in these without the dough drying out. The included plastic scraper is great and is now my go to scraper.
