This is a seriously sharp knife. It handles beautifully, so easy to get great results. Does all the work for the user superb for thinly slicing hard vegetables like potatoes. Makes light work of winter vegetables, I'm looking forward to the next Dauphinouse, it's going to have lots of fine layers. I'm generally a fan of Paudin knives, the offer exceptional quality for a good price.

Beautifully made knife with a lovely wooden handle that is very comfortable to hold with a sharp blade. It is always a joy for me as a passionate home cook to use aesthetically pleasing kitchen implements that work well for day to day use. Very satisfied with this utility knife. It was easy cutting

Overall I like this knife. It is well balanced, sharp, the blade doesn't warp when chopping tough veg, etc. It would have had 5 stars except for one thing. If you look at where the handle and blade join, it is one continuous edge, there is no thumb stop. When chopping veg, you can't help but get moisture on your hand and then the smooth handle gets slippery. When your hand slips there is nothing to stop it going straight from handle to blade - I now have plasters wrapped around 3 fingers! And they aren't tiny cuts either, deep and quite sore as the blade is lovely and sharp. Shame because it is a good knife and looks good too; disappointed as was hoping to buy the set.
