Price not commensurate to the physical quality of the book.
A huge part of catering success is the visual impact of the food. Unfortunately, you cannot appreciate the photos since they are not colored. The paper also feels cheap and my book seems to have discolored page edges from oxidation. The information is ok, though I expected more from this since it is published by Wiley which has published a lot of good reference books that I also own

Maybe knowledge inside is profesional but still not enough detailed for that price. For 139,99 punds i expected at least colorfull photos with food presentation. Dissapointed, since its grayscale raw print. This book is a shame for Culinary institute of america, expected something more complex and profesional.
