Review: Great Maker at affordable price - This is a well thought out machine. It's so easy to use and if you follow the easy instructions it has consistent results.
Review: Perfect for classic European yoghourts - I grew up in France, and we eat a ton of yoghourt. Your basic French yoghourt is relatively cheap (it's a staple), a little firm but not too much (I like mine on the firmer side), silky and a little tart. Unfortunately, those are hard to find in the US. They're either too runny, or thick ("Greek"). Most importantly, they cost a fortune, which isn't good when you eat as many as I do. Enter this machine. I chose this one based on my sister's experience (she bought a few of them before finding this one and loving it). It's cheap, works perfectly well, no hassle, and has all the required settings: - Timer with 1hr increments - Auto-stop after timer has run out - There's a dedicated space to keep the lids - Space for 6 regular jars So how do I make them? It's incredibly easy, and only takes 3 minutes. 1) A little over 1L of 2% milk (maybe 36-40 Fl Oz?). Pour it in a pyrex container, 2 mins in the microwave (right out of the fridge). No need to reach a specific temp or let it cool. 2 minutes and you're good. 2) Mix 5-6 tablespoons of powder milk (I use whole) and one packet of starter (I use the Yogourmet Freeze Dried one) 3) Slowly pour a little milk while whisking energetically, making sure that all the powder is dissolved, then pour the rest and give it a little swirl. 4) Pour in the jars (don't put the lids on them) 5) Set the timer for 10 hours. 6) Put the lids on the jars and put in the fridge for at least 8 hours. Tips: - Powder milk is optional but helps make them more firm. - The longer you leave them, the more tart they will be. How long you need to leave them also depends on ambiant temperature in the kitchen. I've found 9-10 hours to be the sweet spot for me, but you may need to experiment a little. - If your kitchen is cold (mine has some cold drafts and isn't heated), cover the machine with a warm cloth (I normally use a baby fleece blanket, and a rubber pad under the machine in the winter). This has made a world of difference - now that I do this, my yoghourts are a lot more firm than they used to be. - It's ok if they stay in the machine for a couple hours after the timer has stopped. Just don't leave them there too long. - Try leaving a couple of vanilla beans in the milk for a day before making your yoghourts. Yum.

**Q: Can I use my own glass containers?**
A: Hi, Claris. Yes, you can. I use these 7-cup round Pyrex container bowls with rubber lids ( http://www.amazon.com/gp/product/B008MW2BIC/ref=oh_aui_detailpage_o08_s00?ie=UTF8&psc=1 ). One of these fits perfectly without the lid (which you don't use inside the machine) inside this yogurt maker. I like Greek-style yogurt, so after I process it for 10 hours, I turn it into this EuroCuisine Greek yogurt strainer ( http://www.amazon.com/gp/product/B0091XNL0I/ref=oh_aui_detailpage_o08_s01?ie=UTF8&psc=1 ) and put it into the 'fridge for about 25 hours. I use the same (washed & dried) Pyrex glass container to store the strained thick yogurt in (with it's red rubber lid) in my 'fridge. Since I use a lot of yogurt and also make cheeses (large extended family), I make two batches  of the yogurt per day 5-6 days per week. I generally make my batches around 10:30am and 10:30pm. And if my aged cheeses and smoked cheeses all end up as well as the first ones have (just started yogurt- and cheese-making 2 months ago, so I'm awaiting some of the aged cheeses to age & ripen), I'm going to buy at least one other of these EuroCusine yogurt makers. I already bought a second strainer and more Pyrex bowls. I feed my husband and me, my three adult step-children, four grandchildren, and hubby's two ex-wives, two ex-sisters-in-law & a brother-in-law, and my own 2 sisters-in-law and 3 brothers-in-law, plus various neighbors, all of the yogurt and cheese we can eat from working this one machine hard. My extended family all live in rural farm country, where I can easily trade my own baked goods and my cooking and - now - my own yogurt and cheese, for fresh cow's, sheep, and goat's milks. So I need to use the one large batch method, not little jars. Pyrex works great. HTH

**Q: What is the differnce between Eurocuisine YMX650 Yogurt maker and YM100?**
A: The YM100 cover is very fragile and breaks easily..i prefer the YMX 650. I have them both as I make 2 qts at a time. It's worth the extra money. I bought the YM  100 based on the previous guys review.

**Q: Can you make dairy free yogurt with this machine?**
A: Wow just got off the phone with Euro Cuisine. They were so helpful! Yes you can do dairy free yogurt! You will need to find a recipe and follow that. If you are using dairy free milk like soy, almond or coconut you are going to have to add sugar. If you need more info just call them they are so helpful.

**Q: Do you have to heat the milk first before putting it in the yogurt maker or does the maker do it for you?  If it doesn't, do any?**
A: I think it tastes better.  Think of the difference between scalded milk and regular milk, much better in tea or coffee, my view.  More 'custardy.'  It also affects texture.  Beyond that, it's suggested to heat the milk because regardless of pasturization, if any bacteria you want got into the milk between buying and making, a good idea.  Someone mentioned microwave.  This is considered a bad idea, doesn't just heats but kills or changes stuff you don't want changed.  Frankly I use a slow cooker with thermometer.  SO easy.  You want good homemade yogurt?  I mean, why are you doing this if you don't want really GOOD yogurt?  It's not THAT expensive from places like Costco.
